Spelt Ziti Rigati Bake

Ingredients

  • 1 TBSP Eden Selected Extra Virgin Olive Oil
  • 1 package Eden Organic Spelt Ziti Rigati
  • 1 cup roasted red pepper, coarsely chopped
  • 1 package (10 oz) frozen chopped spinach
  • 1 1/2 cups organic tofu, pureed
  • 4 fresh basil leaves, torn
  • 3/4 cup grated organic parmesan cheese
  • 1 clove garlic, minced
  • Pinch of freshly grated nutmeg
  • 1 tsp Eden Sea Salt
  • 1/2 tsp freshly ground pepper
  • 2 TBSP freshly grated parmesan cheese

Directions

Preheat oven to 325°. Oil an 8-inch springform pan. Cook pasta per package directions, drain and rinse. In a large bowl, mix pasta, red pepper and spinach and set aside. In another bowl combine tofu, basil, parmesan, garlic and nutmeg. Season with salt and pepper. Add to pasta bowl, gently stir until well combined. Transfer to prepared pan. Smooth top and sprinkle with parmesan. Bake until golden brown, 40 to 50 minutes. Let stand 10 minutes before removing springform. Serve warm or at room temperature.
