Kamut® Elbow Hoppin' John

Ingredients

  • 1 package Eden Organic Kamut Elbows
  • 1 TBSP Eden Selected Extra Virgin Olive Oil
  • 1 medium onion, chopped
  • 3 cloves garlic, chopped
  • 1 green bell pepper, seeded and chopped
  • 1 can Eden Organic Diced Tomatoes with Green Chilies, drained
  • 2 cans Eden Organic Black Eyed Peas, drained
  • 1 tsp Eden Organic Apple Cider Vinegar
  • 3 tsp chopped fresh cilantro, or 1 tsp dried cilantro
  • 2 cups kale, stemmed and chopped
  • Eden Sea Salt
  • Freshly ground black pepper

Directions

Cook pasta according to package directions; drain. Heat oil over medium heat, sauté onion, garlic and pepper until softened, about 3 minutes. Add tomatoes and simmer 10 minutes. Stir occasionally. Add the black eyed peas, kale, vinegar and cilantro. Cover and simmer 5 minutes more. Season with salt and black pepper. Toss gently with cooked pasta and serve.
