Directions Cook pasta according to package directions; drain. Heat oil over medium heat, sauté onion, garlic and pepper until softened, about 3 minutes. Add tomatoes and simmer 10 minutes. Stir occasionally. Add the black eyed peas, kale, vinegar and cilantro. Cover and simmer 5 minutes more. Season with salt and black pepper. Toss gently with cooked pasta and serve. |
